"Baked up a batch of the bran muffins this morning. I'm lactose intolerant, so I can use my soy milk with great results. I make a "fake cream cheese" by throwing a package of extra firm tofu in the Cuisinart, adding a heaping tbsp. of sugar-free orange marmalade or apricot preserves, a packet of Equal, some cinnamon, nutmeg and a bit of vanilla. Whiz it around until smooth, and divide into 1/3 c. portions. Super on that warm bran muffin, and I've got my protein and healthy carbs! That's a small picture of dietary restrictions . . . . . see why I love your muffins??"
